Curried sweet potato soup

This easy-to-make curried sweet potato soup freezes well. Adjust the amount of curry paste according to taste.


750 g sweet potato, peeled and choppedIMG_0054

2 cups water

2 tsp oil

1 onion, chopped

1/2 tsp red curry paste

2 T lemongrass, finely chopped

1 tsp brown sugar

1 cup coconut milk

fresh coriander for garnish

Method: Boil sweet potato until tender, and mash without draining. In another pan saute onion and curry paste in oil. Add to sweet potato along with the lemongrass, brown sugar, and coconut milk. Reheat but do not allow to boil. Puree and serve, garnished with fresh coriander.
