This is a delicious pesto sauce, and can be served as a dip with biscuits, or stirred through pasta. It can be made with basil, coriander, parsley – whatever you have an abundance of.
1/2 cup pine nuts
3 – 4 cups of loosely packed basil, coriander, parsley
1/2 cup grated cheese
3 garlic cloves
salt and pepper
1/4 – 1/2 cup olive oil
Method: Place pine nuts, herbs, grated cheese, garlic, salt and pepper into a food processor and pulse until pureed, or grind using a mortar and pestle. Gradually add oil until the pesto combines.
