Curried sweet potato soup

This easy-to-make curried sweet potato soup freezes well. Adjust the amount of curry paste according to taste.


750 g sweet potato, peeled and choppedIMG_0054

2 cups water

2 tsp oil

1 onion, chopped

1/2 tsp red curry paste

2 T lemongrass, finely chopped

1 tsp brown sugar

1 cup coconut milk

fresh coriander for garnish

Method: Boil sweet potato until tender, and mash without draining. In another pan saute onion and curry paste in oil. Add to sweet potato along with the lemongrass, brown sugar, and coconut milk. Reheat but do not allow to boil. Puree and serve, garnished with fresh coriander.

    I have come to love sweet potato and your curried soup recipe sounds very nice. Will give it a try. I live just north of Newcastle on just 25 acres with three sheep who are our lawnmowers in the paddocks away from the house and we have our neighbours horses come over from time to time to eat some of the grass when they are low on grass at their house. The rest of the area has trees on the property. I did have chooks but had to give it away as we have so many eagles flying around overhead and also foxes. I also found myself in the chook pen with a red belly black snake going out the other end and that sort of put the wind up me.
    We moved here late in life so I am no spring chicken myself. M<y husband wanted something to do rather than living on a really small block. So here we are.

      Margaret thanks so much for introducing yourself and describing your lovely property. I would just love to have more land, especially with good soil which we lack here. We’ve had a few encounters with snakes too. There are always threats with having any livestock and you feel just so responsible for their welfare. Sheep sound like a terrific way to keep the grass down. I believe they are the least smelly too! Good on you for making the change later in life.
