This curried egg dip recipe is lovely served with biscuits or vegie sticks. It also makes a tasty sandwich filling.
1/2 red onion diced; or a few sliced shallots
2 Tbsp mayonnaise (I use soy mayonnaise)
2 tsp curry powder, or to taste
small handful of chopped parsley
Mash eggs with a fork. Add all other ingredients, and mix well.
