Beetroot Dip

I have been experimenting with the balance of ingredients in this Beetroot Dip, trying to equal or improve on packaged beetroot dip. Let me know what you think!


2 – 3 small beetroot, unpeeled

3 – 4 cloves of garlic

100g smooth feta

1 Tbs lemon juice

1 Tbs balsamic vinegar

1 ts ground cumin

salt and pepper to tasteIMG_0566


Wrap beetroot together in foil, adding in a tablespoon of water, and bake for 30 minutes. Add in peeled garlic and bake for a further 10 – 15 minutes or until the beetroot is soft when pierced with a skewer. Place all ingredients into a food processor and process until smooth.
